

I love pancakes. fact.
I know only one person who doesn't like pancakes.
I tried hard to not argue with him on it. (LIE, HEHEHE)
What I've discovered lately, is that it's SUPAH easy to make them without a recipe. I haven't used a pancake recipe in a long while, because I went on this challenge/experiment (I looove those) to see if I could create a mental recipe using simple ingredients, so I never have to really on a recipe again!!!! (well, at least for pannycakes...)
The only thing you have to do is mix up some flour with some baking powder and baking soda, cinnamon, and some oats or flaxseed meal, whatever. Then lightly beat an egg in a bowl and add it to the flour, and add some milk, and stir. Add more milk as you go. (start small) IT'S SO AMAZINGLY EASY!
TIPS FOR FAB PANCAKES:
1.) go easy on the baking soda, heavy on the baking powder. too much baking soda tastes like bubbling salt. no joke. I'm talking like 1/4 t. of the soda, 1 t. powder.
2.) add a bit o' cinnamon to everything sweet, because it rocks. It just does. And it's good for you apparently, in some herby-kind-of-way.
3.) Mix one cup of milk with 1 T lemon juice, let sit about 10 minutes. Then add to pancakes. It's called buttermilk.

4.) for a single serving, 1/3 c. flour makes about 3-4 pancakes, unless you make them the size of the plate. In that case, you're gonna need a heck of a lot more flour.
