
I have voyaged to this lovely blog of mine that only one person I know consistently reads..... to talk about my favorite breakfast in the world. No, it's not pancakes, although you might have thought that from my earlier blog :), it's an eggy-beany-salsa-y wrap of a burrito! Now, when I wake up in the morning, I am either one of two things: RAVENOUSLY hungry, or so not hungry that the thought of food is rather revolting. Now, whether I'm feeling either of those, I am never in the mood for something salty and savory. Never. I like sugar in the mornings. Well, maybe not sugar, but not salsa. But the thing is, whenever I go against my taste buds and make up a dinner-like meal for breakfast, I always end up enjoying it more than p.b. and toast. So here is the one breakfast that tastes amazing from the first bite to the last-
MEXICAN BREAKFAST WRAP
Fry an egg. Heat up a can of beans, or whatever beans you have around. Black or pinto- or anything, really. Just not garbanzo. Put fried egg and beans in tortilla,(preferably a Trader Joe's whole-wheat-flaxseed one) spoon salsa on top, wrap, and eat, letting the egg yolk drip all over your face and hands. It's more fun that way. :D The best part? The protein really holds all the way until lunchtime, so you aren't ready to eat a second breakfast in about 30 seconds.
